Sourdough Pancakes
Fluffy, scrumptious pancakes to use up your sourdough discard!

- 220 g Plain flour
- 140 g sourdough discard
- 200 ml milk
- 1 egg
- 1 tsp baking soda
- 2 tsp baking powder
- 50 g sugar
- 1/2 tsp salt
Mix all dry ingredients together in a large mixing bowl.
Add in the sourdough discard, egg and milk. Whisk together to incorporate into a batter. The batter will feel stiffer than usual pancake batter, but still be fairly fluid.
Heat up some butter or oil in a non stick pan over medium heat. Spoon Batter into the pan, creating your desired pancake shape or size. Let it cook undisturbed for 2-3mins. Bubbles should start to appear, that means the pancake is ready to be flipped. Carefully flip the pancake and cook for another 2 mins or golden brown on each side. Serve immediately with your desired toppings.
