Limoncello Ice cream

Equipment

Ingredients

  • 1 lemon
  • 125 ml milk
  • 60 g sugar
  • 2 yolks
  • 60 ml limoncello liqueur
  • 250 ml thickened cream
  • 1/2 tsp vanilla bean paste
  • 1 pinch salt

Instructions

  • Prechill your ice cream churner if required.
  • Zest the lemon and rub it into 40g of the sugar, to release the aromatic compounds. Set aside.
  • Place vanilla, milk , pinch of salt and remaining sugar in a small pot.
  • Add yolks to the zest and sugar, whisk until pale and thick.
  • Bring the milk to a boil, stirring to melt the sugar. Immediately remove from heat and slowly stream into the yolks mixture, while whisking constantly.
  • Return the mixture to the pot and set over low heat. Constantly stir the mixture for 2-3mins, until slightly thickened, to form the anglaise (ice cream base).
  • Pass the mixture through a sieve to strain out the zest and add in the limoncello. Place in the fridge for 1 hr to chill.
  • Stir in the thickened cream and churn according to your ice cream churner's instructions. Place into the freezer to set.

Notes

You may find 60ml of limoncello slightly too boozy, especially if you are sensitive to alcohol. You can add in 30ml first, taste and adjust the amount as you like.
